How to Make Authentic Hanoi Bun Cha

Step 1: Marinate the meat

  • Pork belly: Marinate with garlic, shallots, fish sauce, sugar, pepper, honey or caramel sauce for 1–2 hours.

  • Ground pork: Mix with shallots, fish sauce, pepper, then form into small patties.

Step 2: Grill the meat

  • Grill over charcoal for best flavor, or bake at 180–200°C (356–392°F) until golden and aromatic.

  • An air fryer can also be used as a time-saving option.

Step 3: Make the dipping sauce

  • Mix fish sauce, water, sugar, vinegar/lime in a 2:2:1:1 ratio.

  • Stir until dissolved, then add minced garlic, chili, and pickled papaya or carrot for texture and balance.

Step 4: Assemble the dish

  • Arrange rice vermicelli and herbs on a plate.

  • Place grilled pork into a bowl of warm dipping sauce.

  • To eat, dip noodles, herbs, and pork into the sauce and enjoy.
