Ingredients
For the grilled pork:
300g pork belly (thinly sliced)
300g ground pork (for pork patties)
Minced garlic, shallots, lemongrass

2 tablespoons quality fish sauce
2 tablespoons water
1 tablespoon sugar
1 tablespoon vinegar or lime juice

How to Make Authentic Hanoi Bun Cha
Step 1: Marinate the meat
Pork belly: Marinate with garlic, shallots, fish sauce, sugar, pepper, honey or caramel sauce for 1–2 hours.
Ground pork: Mix with shallots, fish sauce, pepper, then form into small patties.
Step 2: Grill the meat
Grill over charcoal for best flavor, or bake at 180–200°C (356–392°F) until golden and aromatic.
An air fryer can also be used as a time-saving option.
Step 3: Make the dipping sauce
Mix fish sauce, water, sugar, vinegar/lime in a 2:2:1:1 ratio.
Stir until dissolved, then add minced garlic, chili, and pickled papaya or carrot for texture and balance.
Step 4: Assemble the dish
Arrange rice vermicelli and herbs on a plate.
Place grilled pork into a bowl of warm dipping sauce.
To eat, dip noodles, herbs, and pork into the sauce and enjoy.
